Julian Cox created three versions of this cocktail for Playa in Hollywood: a before-dinner drink mixed with dry fino sherry; one mixed with rich amontillado sherry to drink with dinner; and an after-dinner drink, the Andalusion, that he mixes with sweet sherry.

3/4 ounce reposado tequila
3/4 ounce Cocchi Americano (fortified, slightly bitter aperitif wine)
3/4 ounce Lustau East India Solera sherry
3/4 ounce bianco vermouth, preferably Perucchi
1 lemon twist, for garnish
How to Make It
In a mixing glass, combine the tequila, Cocchi Americano, sherry and vermouth; fill with ice and stir well. Strain into a chilled coupe and garnish with the twist.
