The Andalusian is perhaps the perfect brunch drink. Nutty, minty and light, it's based on a traditional aperitif served in Jerez, Spain, where sherry is produced.

4 mint sprigs
2 dashes of peach bitters
Ice
2 ounces fino sherry
2 ounces chilled bitter lemon soda
One 2-inch strip of lemon zest

In a white wine glass, gently muddle the mint sprigs with the peach bitters. Half fill the glass with ice, add the sherry and bitter lemon soda and stir well. Garnish with the lemon zest.
