With a new restaurant in the works, Wasser keeps busy, but still makes time for her three pups.
Three years ago, Samantha Wasser launched By Chloe, the uber-popular plant-based food spot in New York City, which she expanded to Los Angeles, Boston, Providence, and even London in the last two years. But Wasser didn’t stop with her signature By Chloe brand. Last year, the restaurateur opened The Sosta, a fast-casual Italian restaurant in New York.
Her bevy of restaurants keeps her busy, but on most days, Wasser still manages to sneak in yoga practice and playtime with her three—yes, three!—pups. Here, she gives us a peek into her daily routine, from the brew she drinks every morning to her plans for a new restaurant.
6:45 a.m.: My alarm goes off for the first time; I snooze ‘til 6:58 a.m.
6:58 a.m.: I wake up to feed my animals—we just adopted our third dog, Jett, from Rescue City and she wakes up with a lot of energy!
7:05 a.m.: After the animals are taken care of, I brew some hot water, lemon, collagen, and apple cider vinegar. It’s the concoction I start with every morning and end with every night.
7:10 a.m.: I down a boatload of vitamins, most of them from Dr. Richard Firshein, whom I adore. It’s super important to know what you’re putting in your body and why you need it.
7:15 a.m.: I sit down for a minute and let the doggies play. Jett and Bowie—my 3-year-old English golden retrievers—are inseparable, and it's adorable to watch them play together. Zeppelin, our oldest dog, kind of stays out of the way to watch the puppies play.
7:30 a.m.: Time for exercise. I have been doing yoga with Beth Cooke for almost two years now and love her. She comes to my house and has really made me fall in love with yoga.
8:35 a.m.: I hop in the shower and get dressed. I look at my schedule to see what I have planned for the day to decide what to wear. Today, I’m running around from place to place, so I decide to dress casual. I throw on a Rosie Assoulin “say it with flowers” tee, trademark denim, the row boots, pink Takesh heart-shaped glasses—I love having fun with sunglasses; they add great detail to any outfit—vintage hoops, and a fuzzy jacket.
9:05 a.m.: I head downstairs to froth some Oatly oat milk—I discovered this a few months ago and am absolutely obsessed, so I keep it at home and the office now—and I add some Panatea matcha. I throw it in a to-go cup to bring with me and toss a banana in my purse. Most days you’ll find a banana tucked away in my purse at some point.
9:15 a.m.: I hop in a car to head to my first appointment of the day. I eat the banana in the car on my way there. I don’t normally eat a large breakfast, so a banana or some yogurt are usually enough for me to get the day started.
10 a.m.: First stop of the day is at CCRM, a fertility center, to get some blood work done.
11 a.m.: I head to acupuncture and body work with Shari Auth of Body Point at Modrn Sanctuary. Shari is seriously a god.
12:10 p.m.: I jump in a car again to head to The Sosta for a busy afternoon. On the way, I scroll through Instagram to like and answer comments on the @eatbychloe and @thesosta accounts. I check the Instagram every day, and I absolutely love seeing customers enjoying themselves in our stores through their images and stories.
12:55 a.m.: When I get to The Sosta, I have lunch with Liv Perez of Friend of a Friend. She’s a long-time friend, so it’s a great chance to catch up and chat about her upcoming feature as our March chef in our guest chef series this year. I eat our verde salad—romaine lettuce and veggies topped with our Sicilian tuna and green goddess dressing—and a side of our Calabrian chile cauliflower. I love it so much I sometimes order that as my main meal.
1:45 p.m.: I have an interview for a new role on my team. We are a growing company, so it’s really exciting to be bringing on new people because my team is so small. I have her meet me at The Sosta. I love to fit in meetings wherever I am to keep from running around.
2 p.m.: We have a photo shoot for our February guest chef series at The Sosta. We are so excited to be featuring Gail Simmons for February. Because we are shooting the new pasta special, we also get to try the special pasta, which is going to be a mafaldine with stracciatella, kale, lemon, and chilies. It’s so delicious. It was pouring rain and we shot the pasta outside, so we were all a bit damp but we made it work—anything for natural light!
3:05 p.m.: I jump on a call with the Armory team. By Chloe will be returning and it will be The Sosta’s first year; both will be pop up restaurants as part of the four-day installation this March. We review the most pressing operational details and a few fun things such as furniture selection. I’m looking forward to seeing it come together as we work on the activation. I sip on Essentia water during the call—it’s my go-to water of choice.
4 p.m.: After a busy afternoon, I get to catch up with Ali LaRaia, my partner in The Sosta. It was a great time to finally sit down at the beginning of the year after a crazy holiday season. I snacked on our Zucca vodka and a little more Calabrian cauliflower.
4:45 p.m.: Another call—I know, I know!—to discuss a new retail collaboration we’ll be announcing later this season. We are finalizing the packaging and distribution, and I cannot wait to see how it all goes. All I’ll say is it’s going to be an awesome twist on our Merry Prankster juice from By Chloe offered in a really fun way.
5 p.m.: I walked over to Dez, our new Middle Eastern fast-casual concept that will open later this year with chef Eden Grinshpan on Mulberry. It’s just two blocks from The Sosta on Kenmare and By Chloe on Lafayette, which needless to say is very convenient for me. We have a construction walk-through to see how things are coming along.
6 p.m.: Because I was already in the neighborhood, I hop around the corner to By Chloe to check on the store and catch up with the manager. I down as much water as I can and grab some juice to take home with me for tomorrow morning. I like the Junkie and the Cuckoo’s Nest the most.
6:35 p.m.: I head back to Brooklyn to walk and feed my animals before having friends over.
8:30 p.m.: After a busy day, we picked up sushi from my go-to spot, Sushi Katsuei in Park Slope. Hosting friends is one of my favorite things about living with more space in Brooklyn. Now I’m just waiting for spring to come back so we can host dinners on the patio!
9 p.m.: We play HQ with said friends. Spoiler alert—we didn’t win.
10:42 p.m.: I make myself my hot water with lemon, collagen, and apple cider vinegar.
11:05 p.m.: I finally crawl into bed to read my Kindle before catching some Zs. I absolutely love crime thrillers and recently discovered the author Karin Slaughter—yes, that’s her name! I just finished her Grant County series, and I’m halfway through my second book in the Will Trent series. I highly recommend it, but only if you can handle gruesome books.
