Make this literary genius proud with this Mad Genius Tip.

On March 2, 1904, Theodor Seuss Geisel was born, though you likely know him better as children's book champion Dr. Seuss. That would make today his 114th birthday! And what better way to celebrate than with your own DIY version of green eggs and ham? Thanks to Food & Wine Culinary Director Justin Chapple’s latest episode of Mad Genius Tips, this particular plate might come out a bit more appetizing than the version Sam-I-Am so ardently pushes in the book.

First, you’ll need to separate two eggs. Though there are many ways to do this, Chapple uses the shell to separate the white and yolk (see Jacques Pépin for further egg-separation technique advice). Put the yolk into one bowl and the white into another, then do the same with a second egg.

Now comes the moment you’ve been waiting for. Take just a little bit of green food coloring, and add it to the egg whites only. Mix very well, until you get that solid color you can see in the video.

Now heat your skillet and add a bit of oil, then pour in the whites (greens?). Immediately grab your bowl of yolks, and very carefully slide them on top of the whites, which will create a sort of reconstituted eggs sunny side up. Cook for a few minutes, until the green whites are set but the yolk is still runny, then slide your creation onto a plate beside some beautiful, sizzling ham. Sprinkle with a bit of salt, and you’ll have some green eggs and ham that even Dr. Seuss himself would be proud of. Maybe they’ll look so good that Sam-I-am won’t need to make such a hard sell next time on what is clearly a delicious meal.
