Offer creamy smoothies, rich with bananas, yogurt and honey, to start a mellow Sunday brunch. Pumpernickel waffles have mashed potatoes in the batter, which give a soft, chewy texture. Serve them with smoked salmon, poached eggs and chives. The waffles can be made ahead, wrapped well and frozen for up to two weeks; be sure to recrisp them in either the oven or the waffle iron. Cakey muffins have minced crystallized ginger for a spicy kick and call for frozen blueberries, raspberries or blackberries. The muffins can be frozen for up to one month--they're great to have on hand and much tastier than the store-bought variety!
