Here's a quick Korean meal that can be enjoyed on a busy weeknight. Be sure to buy top-quality fresh tuna for the main dish, which can also be made with salmon steaks or fillets. Cook the fish right before serving--the steaks or fillets are seared on the stove until medium-rare and topped with a piquant sauce spiked with garlic and scallions. Spinach is lightly steamed and flavored with sesame and soy. Allow half an hour for the flavors in the sweet daikon and carrot salad to blend (you can steam the rice at the same time).
