Healthy Pilaf Dinner
How about a healthy and quick dinner this week? Soup with egg threads, vegetables and a sprinkling of Parmesan cheese makes a warming start. Combine orzo (a rice-shaped pasta) with chunks of boneless chicken, baby peas and green olives for a satisfying one-dish main course. The dessert is easy but impressive: Layer honeyed ricotta cheese with blood-orange sections and grated bittersweet chocolate in tall stemmed glasses. Allow three hours to chill the sweetened ricotta before assembling the trifles.
