French Fish Dinner
While preparing the beets for the first course, remember to save the greens to use in the salad. You can roast the beets, prepare the dressing and toast the walnuts up to three days before serving; be sure to refrigerate the beets and dressing separately and keep the nuts in an airtight container at room temperature so they stay crisp. Skate, a moist, flavorful fish, is served with a classic French sauce of capers, vinegar and browned butter and accompanied by boiled potatoes. Soft chocolate cakes are baked in small ramekins and served while still warm from the oven, with whipped cream on the side.
