Caribbean Dinner with Mojo

Prepare a pitcher of cool Caribbean cocktails made with orange juice, guava nectar, amber rum and ginger ale, and get everyone into a tropical mood. Bell peppers, eggplant, sweet onion and zucchini are grilled or broiled and tossed with salad greens and a Cuban mojo--a zippy sauce made with vinegar or citrus juice and garlic. Prepare the mojo (pronounced "mo-ho") up to four days in advance and keep refrigerated. The banana flavor in the chicken curry is very subtle--serve with plenty of steamed rice. The coconut flans are prepared with unsweetened coconut milk and aged rum.
