Luxe Christmas Dinner
Serve a feast with all the trimmings this Christmas. Start with a salad of endive and watercress, topped with crunchy candied walnuts. The star attraction is a standing rib roast crusted with a paste of coriander seeds, peppercorns and orange zest. Yukon Gold potatoes are mashed and flavored with truffle butter, which you can find at specialty food shops. The medley of baked winter vegetables may be prepared ahead and stand at room temperature for up to six hours, then rewarmed before serving. Cream-stuffed poached pears are topped with a bittersweet chocolate sauce for a luxurious dessert.
