Provençal Supper

Use prepared puff pastry as the base for a galette (a type of tart) topped with a mixture of roasted vegetables, olives and herbs. The components can be prepared ahead of time and refrigerated overnight, then assembled and baked before serving. Zucchini gets a savory stuffing of ground pork and eggplant, flavored with bacon, Parmesan cheese and sun-dried tomatoes. You may serve the zucchini either hot, warm or at room temperature. The Almond Crème Caramels must be refrigerated overnight, and can be made up to two days ahead.
