Stir-Fry Supper

Vietnamese summer rolls combine cooked shrimp, rice noodles and salad vegetables in a rice paper wrapper. These are not fried, like spring rolls, but served fresh with a dipping sauce. The rice paper wrappers and the fish sauce are available at Asian markets. This chicken stir-fry is sweet and spicy with the flavors of lemon, ginger, chile oil and crunchy cashew nuts. Serve with the stir-fried asparagus and steamed white rice. For dessert, we offer an exotic tapioca pudding, full of the flavors of coconut and fresh fruits such as papaya, pineapple, mango and melon.
