The fish dish is a fennel-lover's delight as it has a fennel-seed marinade and is roasted on a bed of fennel bulbs. If you're able to obtain fennel bulbs with the fronds attached at your local market, sprinkle the finished dish with the chopped fronds for extra flavor. Buy fresh whole-milk ricotta cheese for the dessert tart, which can be served warm or at room temperature.
