Head Southwest for lunchtime inspiration this week. Flour tortillas are stuffed with smoked turkey and pepper Jack cheese, baked, and topped with chopped tomatoes and arugula in a lime cream. Quinoa is combined with corn, radishes, onion and cucumber and topped with a zesty dressing of tomatillos, cilantro, chiles and garlic for a hearty salad. Warm spiced chocolate soufflé cake is actually an "enlightened" recipe, which you won't be able to tell by tasting. Serve the warm cake dusted with confectioners' sugar.
