Elegant Roast Pork Dinner
Treat dinner guests to an elegant Southern-style dinner. Caramelized Vidalias (or you may substitute another variety of sweet onions) star in this heady soup, glossy with cream and crowned with cheesy croutons. You'll need to brine the pork two days ahead in the sweet tea mixture. After roasting, carve the meat into individual chops for serving. Luscious corn pudding may be made earlier in the day and then reheated prior to serving. A platter of sautéed asparagus and sweet sugar snaps will be roundly welcomed, as will warm buttermilk biscuits. You'll hear "oohs" and "aahs" when you bring out the pecan-spice cake, with its rich swirls of caramel frosting. Accept all compliments graciously.
