Healthy Grilling Luncheon
Chef Kerry Simon devised this healthy menu in which every course is prepared on the grill. Welcome guests with cups of cool gazpacho made with grilled zucchini and peppers, and serve plates of garlicky shrimp accompanied by a dipping sauce of bright tomato chutney spiked with lemongrass and ginger (right). For the main course, wrap warm tortillas around succulent grilled fish, citrusy avocado and crispy shredded napa cabbage. For dessert, caramelized grilled pineapple adds a naturally sweet note to refreshing frozen yogurt and mint.
