<p>A new breed of boutique hotel is sprouting up along the Dominican Republic's Caribbean coast. Typical of the trend is the Sivory Punta Cana, a serene and secluded resort on a long stretch of beach about an hour's drive from the Punta Cana International Airport. Sivory's grounds are dotted with sea grape trees and two-story terra-cotta villas, which house 55 handsomely furnished suites. Since neighboring resorts are more buffet than soufflé, the hotel's emphasis on food and cocktails is a welcome change. You can choose from among three restaurants—Asian fusion, Mediterranean, or nouvelle French—and three lounges (including a cigar bar). The wine cellar is stocked with more than 8,000 bottles, full-size highlights of which reside in a small refrigerator in every room. </p>
