When it opened on the west end of Anguilla in 1984, the trendsetting 55-room Malliouhana Hotel & Spa helped put the beach-blessed island on the radar of stylish travelers. Today, the hotel continues to set standards for excellence. On a verdant seaside cliff, the suites are vast and richly propped: rattan furniture, dark walnut millwork, and Italian marble bathrooms. At the oceanfront 15,000- square-foot spa, a dedicated staff of 25 provides a wealth of services, from an Ocean Oasis massage employing marine mud to a one-on-one game of basketball with a personal trainer. The Michelin-starred restaurant, named for its chef, Michel Rostang, is just as well-equipped. Accompaniment for such dishes as lobster ravioli in coconut milk or gingerbread-crusted veal can be found in the wine cellar, known for its stock of 25,000 bottles.
