Young Welsh couple Ed and Louise Sykes returned to their homeland after a seven-year stint in London to transform a former carriage house and stable in the coastal town of Newport into a shabby-chic six-room inn and restaurant. In the antiques-filled lounge, contemporary art lines the walls, and guest rooms, spread out between the two buildings, have an urbane palette, with chunky reclaimed- wood headboards and tall Georgian windows. At the restaurant, chef Davide Daltoe's seasonal dishes—Preseli lamb cutlets in a delicate rosemary jus, a flavorful spiced pumpkin soup—are a subtle triumph.
