With its 300 cows and 2,000 sheep, Hacienda Zuleta is a working farm that produces crops (wheat, quinoa, organic vegetables) in the Ecuadoran Andes, two hours north of Quito. Purebred Andalusian horses transport guests to the nearby 800-year-old Caranqui pyramid mounds, a trout farm, or the resident condor-rehabilitation project. Each night, meals at the common table may include such specials as the inn’s famous rice tart or a heart-of-palm ceviche. On cool days, guests gather in the sitting room in front of a fire, where wine is served with cheese made on the premises.
