COST: $$$
Away from the tourist flow of the Canal Zone, this swank addition to Oud Zuid (Old South) is housed in a renovated middle school that’s been given a luxurious makeover by FG Stijl, a local design firm, and is run by students from the ROC, Holland’s top hospitality college. The palette is dark and warm in the 45 suites (black lacquer moldings and door frames, furniture upholstered in eggplant and green velvets), and the mood is nothing short of glamorous. Bathrooms, with dramatically lit, extra-deep curtained bathtubs and oversized mirrors, are a highlight.
Room to book: Number 31 used to be the middle school’s chemistry lab; the bi-level room has separate sitting and sleeping areas, with eight-foot-tall bay windows lined with benches upholstered in sumptuous embroidered Chinese silks.
Insider Tip: Don’t miss the breakfast downstairs in the hotel’s restaurant, which is one of Amsterdam’s finest. That banana-mango smoothie is just an aperitif.
