Candelaria del Monte is surrounded by nearly 200 acres of Argentina’s famous pampas, vast pasturelands whose striking topography is broken only by occasional stands of eucalyptus. The intimate four-bedroom and two-suite colonial property was a private residence before it opened to guests in 2004, and it retains a cozy, lived-in feel: black-lacquered antiques, a riot of chintzes, armchairs with tassel trims. Guests can swim in the pool, play paddle tennis, or saddle up for one of the hotel’s polo clinics and learn the proper way to wield a mallet. The fruit, eggs, vegetables, and beef used to prepare the regional dishes are homegrown, as is the honey, produced at the ranch’s own apiary.
