Top Chef Alum Gregory Gourdet's Incredible Grapefruit and Asian Pear Salad

[MUSIC] Flavor, for me, is the most important guiding factor in the creation of a dish. We love to be inspired by different countries and I think it speaks to what we do at Departure. For our grapefruit and Asian pear salad we have a fun little mix of fresh grapefruit segments Asian pear that's been cold roasted in petrified wood. The wood has a very innate sweet to it, so the outside gets charred and crispy and we peel that off so it's sweet with a caramelly char taste. The cucumbers are very crunchy, very bright, with the [UNKNOWN] marinade. The carrots are roasted with chilis and ginger. So there is another element of crunch. You have dehydrated roasted beets which have a lot of earth. Fresh grape fruit which is a little tart, a little tangy. And rounding it all off is a really bright vinaigrette with lime juice and fish sauce. And then we finish off with some puffed rice. So you have lots of different vegetables, lots of different textures. [MUSIC] At the end of the day, you are having something that is very rich. It is still very light and extremely dynamic and extremely visually stunning. [MUSIC]
