There is no wine list: The tasting menus (from three to 11 courses) come with seamless pairings from sommelier Todd Ashline, who favors boutique vintages such as 2006 Raffault Chinon Rosé from the Loire or 2003 Jordan Cabernet Sauvignon from California’s Alexander Valley.
