There’s not much that’s tavernlike about this sleek new restaurant that opened last summer in the remodeled Park Hyatt Washington, with sky-high black doors, a 29-foot-long Windsor bench, Shaker-style furniture and an open kitchen with a custom Molteni range as its centerpiece. Chef Brian McBride’s menu celebrates his produce’s provenance.
