This five-year-old pioneer of the contemporary New Orleans food scene was one of the first restaurants to reopen after Katrina. Co-owner John Besh (an F&W Best New Chef 1999) sticks to local ingredients and recipes but applies his European training, modern ideas and sterling technique. The chandelier-lit rooms echo the city’s grand French-Creole temples, but with a fresher spirit.
