Born in the Bahamas to Haitian parents, Wilkinson “Ken” Sejour is equally at home with Bajan conch fritters as he is with the Haitian pikliz—a scorching, crisp salad of shredded cabbage, onion and carrot—all of it impeccably fresh. Locals put out the fire with supersugary, fizzy banana Choucoune, perched on bar stools in what can only be described as bare-bones shacks. And they love it.
