In an airy mauve room, diminutive chef Hiroshi Fukui cooks the freshest Asian ingredients using largely Western techniques. Master sommelier Chuck Furuya, who flits between Hiroshi and the adjacent wine bar, Vino, has created a terrific list with an excellent selection of Rieslings that pair well with the seafood-heavy menu.
