Chefs Paul Kahan (an F&W Best New Chef 1999 and co-owner of Blackbird) and Koren Grieveson have upgraded Avec’s Mediterranean small-plates menu. Despite communal seating, no reservations and the decor of a sauna, Avec is hugely successful, in part because of wine director Eduard Seitan’s Italian, French and Spanish list.
