Grant Achatz (an F&W Best New Chef 2002) may have refined his experimental cooking during a stint with El Bulli’s Ferran Adrià, but he owes his skill at combining flavors to a longer tutelage under the French Laundry’s Thomas Keller. Alinea is a thrill ride in which textures and temperatures aren’t always what you expect them to be.
