Tony Maws (an F&W Best New Chef 2005) uses seasonal ingredients in dishes that are simple yet always inventive—especially when he gets hold of more adventurous items, like cockscomb or pigs’ ears. The place is a charming slice of Paris, hidden down a flight of stairs, with red banquettes and Eartha Kitt in the background.
