Pedro Miguel Schiaffino, chef-owner of this three-year-old restaurant, travels all over Peru in search of obscure regional Andean and Amazonian ingredients. The two minimalist rooms are serene and hushed, all the better to appreciate the tiradito (a sevichelike dish made with cubed raw fish) with kushuro herb, served at the exact moment when the marinade “cooks” the fish.
