In the late 1990s, when Luis Alberto Abrantes returned from apprenticing at a Paris bakery, he transformed his father’s 1958 butcher shop in Leblon into Rio’s top lunch counter. Sandwiches, made with fillings like buffalo mozzarella, prosciutto di Parma and olive paste, are packed inside one of Abrantes’s 30-odd breads.
