Last summer, Sik Chung Lam left Mr. Chow’s in New York to preside over the only truly high-end Chinese restaurant in Latin America—and its steady stream of Rio’s TV celebrities and socialites. In the sleek, three-story restaurant, customers order classic, haute Peking dishes, such as the sweet and sour prawns named for the restaurant’s owner, local entrepreneur and speedboat champion Eike Batista.
