A one-time school gymnasium in the tony Old South neighborhood, near the Rembrandt Museum, now has fancy suede banquettes—and a kitchen run by noted Amsterdam chef Schilo van Coevorden. Having made his name at the ultrachic Blakes Hotel (now the Dylan), Van Coevorden continues to cook his New Dutch food here with great élan.
