Odd hours (weekends from 11 a.m. to 6 p.m., May to September) aren’t the only unusual feature of 10-month-old Proef, housed in an old gas-works building. Owner Marije Vogelzang keeps the food simple—though once in a while she mixes it up with inspired esoterica, like a menu of World War II–era recipes or an aphrodisiacal menu heavy on oysters and saffron.
