It’s not easy to find a true trattoria in the city’s center, but a few blocks from Campo dei Fiori, Da Sergio serves simple Roman classics. The decor consists of a glass refrigerator containing large slabs of beef and pork, an antipasti-laden table and wooden chairs—but the cooking is transcendent. Its use of guanciale instead of ordinary pancetta makes the carbonara some of Rome’s best.
