Chef and co-owner Inaki Aizpitarte took over this modest-looking bistro a year ago and immediately began cooking some of the most creative food in Paris. The plain white walls, small wooden tables and tile floor give little clue to his inventiveness: He incorporates Asian ingredients and has even—successfully—used processed cheese.
