Chef Chris Galvin was already beloved for his modern French food at Galvin Bistrot de Luxe when the Hilton persuaded him to rejuvenate this 28th-floor space, which opened last May. The views—they go on so far that you can even see the Buckingham Palace gardens—remain spectacular.
