Internationally ubiquitous designer Tony Chi transformed this dining room at the Hilton Sydney—adding oversize silk lamp shades and generously spaced banquettes—as part of the hotel’s recent $150 million renovation. Superstar owner Luke Mangan and head chef Joe Pavlovich create glamorous bistro-inspired food. What isn’t so well-known is that Glass also has one of the city’s best wine lists: a 500-bottle mix of big names (Jaboulet’s Hermitage La Chapelle, Domaine des Comtes Lafon, Penfold’s Bin 95 Grange) and up-and-coming boutique producers from Australia to Oregon.
