Veteran Sydney chef Tony Bilson’s elegant four-year-old French restaurant has the polished service and opulent menus characteristic of the genre, but lots of idiosyncratic flourishes, too. Recently, Bilson has created “tribute menus” echoing the style of celebrated chefs, such as Fernand Point and Alain Chapel. And the decor is equally quirky, displaying Bilson’s personal art collection and bottles from wines he has consumed.
