Chef-owner Anotai Gongvatana is raising Thailand’s vegetarian repertoire from its heavily sauced, Chinese-style-tofu doldrums and making it palatable to finicky Bangkok diners. Her flavorful creations, made with produce from her 10-acre farm, cause many in the gorgeous dining room to do a double take (“Surely that dish isn’t meat-free!”).
