The casual new offshoot of this revered, 72-year-old Ginza restaurant has, happily, the same sushi menu and the same exceedingly high standards as the original Kyubei Sushi (which is right across the street). It’s hard not to feel like royalty when your personal sushi chef—each caters to two to six customers at a time—asks if the rice is the right size for you.
