Hong Kong finally got its Robuchon fix late last year, when the French master chef opened an outpost in The Landmark, a high-end shopping center. Fans know the formula: a C-shaped bar wrapped in black marble; spotlights picking out shock-red detailing; and an open kitchen turning out precisely cooked, simple dishes taken way upscale and served in two sizes. What’s less expected is a wine list full of hard-to-find treasures from California, like verticals of Calera Jensen Pinot Noir.
