Chef Bruce Robertson’s new restaurant near the Victoria and Alfred Waterfront, named for its wraparound glass walls, opened to raves last year. Robertson is a perfectionist but not pretentious: He invites diners to mess up his precise dishes with one of the dozen-odd sauces on the menu, from bagna cauda to Shanghai cashew pesto.
