Plenty of delicious things in this universe are vegan. But when it comes to the meaty, cheesy world of sandwiches, we tend to be carnivorously inclined.
Until we met the simply named “Vegan Sandwich” from NYC’s Breads Bakery. Ever since its opening in 2013, this Manhattan bakery has earned rave reviews, particularly for its chocolate babka (no surprise there) and its breads. But they’ve also learned to master the art of the sandwich. Starting with their killer loaves as a base gives them a head-start, but it takes more than just bread to make an excellent sandwich. Like the vegan trifecta of roasted cauliflower, pesto, and radish.
The bread: A house sourdough that’s organic and freshly baked throughout the day.
The filling: The star of the show is roasted cauliflower, flavored with salt and pepper and baked in a bakery oven, which lets it brown until it’s uniform and perfect. (Rather than using florets, they cut the cauliflower lengthwise which creates a “meatier” feeling and texture.) The veggie steak gets joined by a vegan walnut pesto (delicious even without cheese), plus radish sprouts and scallion — irresistible whether you’re a vegan or not.
