There’s Something Strange…In These Twinkies
Who you gonna call this summer when the ghosts come back to town? This July Ghostbusters is back and there's nothing spookier than ethereal specters hanging around, especially when they've invaded your kitchen.
What you see here is not your average Twinkie. This paranormal snack cake is filled with psychokinetic energy, aka lemon curd slime filling. These homemade treats are the ideal snack for bustin' ghosts and sneaking into the theater when you head to the theater to see McCarthy, McKinnon, Wiig and Jones. Just put them in a plastic bag first. You don’t want to get ectoplasm all over your jeans.
1 pastry plunger
1 cup (1 stick) unsalted butter
1 cup sugar
1 teaspoon vanilla
½ cup whole milk
1 cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
Pinch of salt
1 cup lemon curd
Green food gel dye
Preheat the oven to 350 degrees and prep the canoe pan with non-stick spray.
In a bowl whisk together the flour, baking powder, baking soda and salt. Set aside.
In the bowl of an electric mixer cream the butter and sugar. Add the egg and the vanilla until combined.
Alternate adding the flour mixture and the milk to butter/sugar/egg/vanilla and stir until combined.
Spoon the batter into the prepped pan, filling each canoe ¾ full.
Bake for 15 minutes, let cool in the pan then turn out onto a wire rack to cool completely.
In a small bowl stir together the lemon curd and food gel dye until you get a vibrant green.
Spoon the filling into the pastry plunger and fill the cakes from the bottom.
Once the cakes are filled they are ready to serve.
