If you’re looking for a way to incorporate a little more green into your pasta night look no further. This simple pasta dish takes no more than 5 minutes to come together – that’s a beautiful thing on a weeknight. Make this recipe at home or head over to Maman NYC to try out the dish.

Maman’s Zucchini Spaghetti

Ingredients:

Instructions:

Cook corn pasta as instructed on the packaging (bring water to boil and cook for 10 minutes)

Grate zucchini (you should have about ¾ of a cup)

Cut avocado in half, slice one half

In mixing bowl add zucchini, pasta, pesto, 1/2 of the avocado (unsliced) and mix everything together. 

Move mixture to plate and add corn nuts & Parmesan

Top with basil leaves and remaining 1/2 of avocado (sliced)
