Get Green With This Avocado Zucchini Pasta

Maman’s Zucchini Spaghetti
- 1 Zucchini
- 3/4 Cup Corn Spaghetti
- 1/4 Cup Corn nuts
- 1/3 Cup Pesto
- 1/4 Cup Parmesan
- 1 Avocado
- 3 Basil leaves
Cook corn pasta as instructed on the packaging (bring water to boil and cook for 10 minutes)
Grate zucchini (you should have about ¾ of a cup)
Cut avocado in half, slice one half
In mixing bowl add zucchini, pasta, pesto, 1/2 of the avocado (unsliced) and mix everything together.
Move mixture to plate and add corn nuts & Parmesan
Top with basil leaves and remaining 1/2 of avocado (sliced)
