Bacon and Kimchi Are A Match Made In Burger Heaven

Bacon and kimchi may just be the greatest food pairing on the planet. The combination of sweet and savory is absolute perfection. Burger-ized, this is a total comfort food flavor-bomb.

Spicy Maple Bacon & Kimchi Burgers

Makes 4 burgers

  • 8 strips of thick-cut bacon
  • 1 tablespoon maple syrup
  • 1 tablespoon dark rum
  • 1/4 cup mayo
  • 2 tablespoons sriracha hot sauce
  • 1 1/2 lbs ground chuck (80/20)
  • Salt & pepper
  • 1 tablespoon butter
  • 8 slices American cheese
  • 1 cup kimchi (homemade or top quality store-bought)
  • 4 burger-sized lettuce leaves
  • 4 brioche buns

Preheat the oven to 350 degrees F.

Line a baking sheet with parchment paper and arrange the bacon in a single layer. Combine the maple syrup and dark rum, and baste it all over the bacon. Bake for 25 to 30 minutes, flipping halfway through. Set aside.

 

Combine the mayo and sriracha and mix well. Set aside.

Heat a large skillet over medium-heat. Split and toast the brioche buns until nice and golden, about 2 to 3 minutes.  

Divide the ground chuck into 4 equal portions and shape into burger patties, slightly larger than the width of the brioche buns. Place a thumbprint in the center of each patty to help stop the burgers from shrinking. Season both sides of each patty with salt and pepper.

Melt the butter in the skillet and fry the burgers, about 4 minutes per side, for medium-cooked burgers (cook longer if you prefer your burgers well done). In the last minute of cooking top each patty with 2 slices of cheese.

Build the burgers with 1 tablespoon of sauce, 1 burger, 2 slices of bacon, 1/4 cup of kimchi, and a lettuce leaf.
