2011 Château d'Oupia Les Hérétiques: A solid house red is indispensable at Thanksgiving, and Les Hérétiques fulfills all the requirements: It's delicious on its own, it tastes good with almost any food and it's quite cheap, even if you don't find it locally (a case can be had for under $100, shipped). Made by a respected, cult-favorite producer in France's Languedoc region, the wine is partly fermented via carbonic maceration—a technique usually used to make fruity, simple, low-tannin wines like Beaujolais Nouveau. Applied to sturdy Carignan grapes from the warm south of France, the result is a rich red that's also bright and fresh, with a spiced cranberry note that makes it especially ideal for Thanksgiving.

Drink It With: Paprika-rubbed turkey, or any turkey, and pretty much anything else at the table.
